Easy Banana Muffins
These banana muffins are great for toddlers! I decided not to add the nuts to prevent a choking hazard for my little ones in daycare.
The mixture takes only about 10 minutes to mix by hand I used only a fork and one bowl.
Ingredients: 350 oven
1 cup white flour
1 cup whole wheat flour
1 1/2 teaspoons baking soda
1/2 teaspoon salt
3 to 4 overripe bananas (if only 3 bananas I added 1/2 cup applesauce to make up the difference.
1 cup brown sugar
1/2 cup canola or cooking oil
2 eggs
1 teaspoon vanilla
Peeled and mashed overripe bananas in bowl with fork (added applesauce then too).
Then stirred in brown sugar, eggs, oil, vanilla after that mixed in dry ingredients- white flour, whole wheat flour, salt and baking soda.
Greased cupcake tins and filled 3/4 full cooked for about 15 min until centers were done.
